      Blogger Sauvage's (ArtofGlutenFreeBaking.com) excellent guide covers a wide range of cookies, cakes, pies, and (notably) deep-fried treats. The dough used for the book's one gingerbread house is a blend of rice and tapioca flours and xantham gum.
