Osborne (Glutenology), a chiropractor and clinical nutritionist, argues that eating gluten can produce pain stemming from autoimmune conditions. As a response, he proposes a strict elimination diet eschewing grains, pseudo-grains, and many vegetable oils; grain-fed meat; farm-raised fish and shellfish; dairy products; processed and GMO foods; and sugars and artificial sweeteners. Osborne contends that gluten is a “known neurotoxin” and that 140 different autoimmune conditions can be triggered by eating any kind of grain, not just wheat. Part one explores the grain-pain connection and how diet can influence symptoms and issues relating to “grainbesity.” Part two has lists of what to eat and what to avoid during a 15-day “kick-off plan” followed by an even more stringent two-week “challenge phase.” Finally, part three warns against environmental toxins and prescription medications, promoting the holistic, alternative approach of “functional medicine.” Osborne’s draconian directives render his course of treatment difficult but may appeal to those suffering severe reactions and pain.
