      Morante (The Essential Vegan Instant Pot Cookbook) delivers an appealing array of recipes intended for the Omni air fryer oven—what she deems “the biggest and best” of Instant Brand’s air frying appliances. Opening chapters provide tips, pantry essentials (such as Old Bay seasoning), homemade condiment recipes (including a cashew-based mayonnaise), and an overview of the Omni oven’s various uses, which also includes baking, broiling, dehydrating, rotisseriing, reheating, proofing, and slow-cooking. While an unexpected recipe for “bagels” earns its air quotes due to an ingredient list of self-rising flour and yogurt, readers will delight in the result’s authentic chewy texture. Vegetarians can take comfort in the presence of a number of tempting bowl options, such as tempeh with kale coconut salad, and sesame soy tofu over rice. Potato latkes are baked rather than air-fried, and the same treatment is given to a chocolate chip walnut cookie recipe and s’mores for two. A time and temperature chart that caps the book with best-practices for cooking everything from frozen fish sticks to beef jerky will be handy for time-pressed cooks.
